I received this in an email today and figured with spring storms and then hurricanes, it might prove helpful to some. Who would have thought!! Might be worth a try ~

I have a friend who used her solar lights inside at night when her current was off during a hurricane. She stuck them in a jar or bottle and said they gave off plenty of 'free light'. She put one in each room and would put them back outside in the daytime and bring them in at night as long as the current was off. They are safe to use and cheaper than batteries. Bring in a solar light one night and test it.

Due to a thunderstorm, we lost power for about 5 hours. We were scrambling around in the darkness, looking for matches, candles, flashlights, etc. We looked outside, and noticed our solar lights shining brightly all around our patio, stairs, dock, etc. They were beautiful. My wife walked outside, and brought several of the solar lights inside.

We stuck the solar light pipes into plastic drink bottles containers and they made the nicest, brightest, safest, lighting you could ever imagine.

We put one in the bathroom, the kitchen, the living room, etc. There was plenty of light. There are all types of solar lights available. We bought ours at Harbor Freight. We put them all around our yard. They look nice and they do not attract flying bugs like the outdoor lights around our doorway.

The lights we have fit into the small (20 oz) water bottles and they also fit into most of the larger liter bottles. If you need a weight in the plastic bottle to keep them from tipping over, you can put a few of the pretty colorful "flat marbles" that they put in aquariums, and vases. (you can also use sand, aquarium gravel, etc., whatever you have available).

The lights we have were perfect inside our home. They burn all night long if you need them.

The next day, you just take your solar lights back outside and they will instantly recharge and be ready for you to use again any time you need them.

Perfect for power outages, hurricanes, etc. I never thought of it and now you don't have to. So go buy 3-4 solar yard lights--they're cheap!

Until a child tells you what they are thinking, we can't even begin to imagine how their mind is working.... I hope those that are Catholic will find the humor in this. :-)

Little Zachary was doing very badly in math.
His parents had tried everything...tutors, mentors,
flash cards, special learning centers. In short, everything they could think of to help his math.

Finally, in a last ditch effort, they took Zachary down and enrolled him in the local Catholic school. After the first day, little Zachary came home with a very serious look on his face. He didn't even kiss his mother hello. Instead, he went straight to his room and started studying.

Books and papers were spread out all over the room and little Zachary was hard at work. His mother was amazed. She called him down to dinner.

To her shock, the minute he was done, he marched back to his room without a word, and in no time, he was back hitting the books as hard as before.

This went on for some time, day after day, while the mother tried to understand what made all the difference.

Finally, little Zachary brought home his report Card. He quietly laid it on the table, went up to his room and hit the books. With great trepidation, his Mom looked at it and to her great surprise, Little Zachary got an 'A' in math. She could no longer hold her curiosity. She went to his room and said, 'Son, what was it? Was it the nuns?' Little Zachary looked at her and shook his head, no... 'Well, then,' she replied, Was it the books, the discipline, the structure, the uniforms? WHAT WAS IT?'

Little Zachary looked at her and said, 'Well, on the first day of school when I saw that guy nailed to the plus sign, I knew they weren't fooling around.'

~ Mama's Pound Cake ~

This recipe is from Paula Deen's The Lady and Sons Savannah Country Cookbook, copyright1997. I've made this a jillion times over the years and often make adjustments to it as noted below. I LOVE this cake pan! It has a fleur de lis pattern although it's difficult to see it with the glaze. Check this out on Amazon ~

Mama's Pound Cake

1/2 pound (2 sticks) butter, softened
1/2 cup Crisco shortening
3 cups sugar
5 eggs
3 cups all-purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
1 cup milk ~ I used 2/3 c. milk and 1/3 c. Triple Sec
1 tsp. vanilla ~ I used orange extract...approx 2 tsp.

Preheat oven to 325 degrees. Cream butter and shortening together. Add sugar, a little at a time. Add eggs, one at a time, beating after each. Sift together dry ingredients and add to mixture alternately with milk, starting with flour and ending with flour. Add vanilla. Pour into a greased and floured tube pan and bake for 1-1/2 hours.

I made a glaze using powdered sugar, 2 T. softened butter and Triple Sec for the liquid. It's a fabulous cake, very moist and serves a crowd.

The reason I have reached out to you is because of your blog! I myself am a mother to a quirky little 6 year old, Lily. She is my only child, and my whole world (I’m sure you know the feeling!)
The very beginning of Lily’s life was a little more turbulent than I would have hoped for. When Lily was just 31/2 months old, I was diagnosed with Mesothelioma; a type of cancer that kills 90-95% of those who have it. As I’m sure you can imagine, the first thing that came to mind when I was diagnosed was my baby girl and how I wasn’t going to be able to watch her grow up.

After all that, I’m still here 6 years later and cancer free! I'd like to turn my pain into purpose and become someone that other parents can look to for guidance, inspiration, and hope in situations like my own. I contacted you because I feel that your website would be an excellent place for me to share my story. Your visitors are the exact type of people I'm trying to reach out to; these are all the types of people who could gain something from my story.

I've been a volunteer with Chemo Angels since 2003 and miracles are wrought every day in the treatment of cancer. Awareness is a HUGE concern though as many people do not see their Drs for annual physicals, have mammograms or even contact their physician when symptoms are evident. As a typical female, Heather felt she was just overly tired from work, being a new mother, etc. Even when you receive a diagnosis that might be questionable, it's imperative to push for more tests, information, second or third opinions, etc. Cancer is not selective to age, gender, ethnicity, sexual preference or belief system.

~ An Update and Stepping Stones ~

I've missed everyone so much! It's been so crazy around here and I've felt so yucky, just didn't feel I had anything of value to share. I read something today about "stepping stones" and thought perhaps that's what I'm experiencing...stepping stones, although rough & jagged at times, can lead to wonderful, exciting things!

I mentioned ~~eons ago,~~ a couple months ago about having the cabinets in the kitchen and both bathrooms painted white. Well, I lost count of how many times the painters were here...4 for sure! Then the maintenance guys here had to take alllllll the doors off and apply new hinges and then reinstall the doors...and then retouch the paint where needed. Electricians were here one day when I was gone...had to have Forrester out of here plus my car was in the shop so I literally was gone from 8:30a.m. to 6p.m. When I returned, totally exhausted and minus a LOT of money for car repairs, I found holes left in the ceilings and walls where they had wired new ceiling fans in my bedroom and the living room. Oh, and they also broke the key off in the lock of the front door and a new lock had to be installed. I received a phone call about that and had to go to my neighbor's to pick up the new keys as the office would be closed when I got home. :-( I cannot stand for any type of spider, bug or varmint to have a way into my home so I keep a close watch for repairs that might need to be made to window or door seals and I came home to actual HOLES! I'm not supposed to use stairs due to my knees, however, I had to use the step stool to climb up and stuff the holes with plastic bags. There was sheet rock dropped where it landed, debris everywhere, books & photos knocked over in a bookcase and a total mess left. I called the office and left a very *angry* message! Then we have the repairs and clean up for all of that with me threatening everyone that entered with their life. The repairs were made the next day and I have to say the painters did a wonderful job of repairing, HOWEVER, they did NOT use the proper texture technique and painted the ceiling areas the same color as the walls. The ceilings are off-white and all the walls are a pale khaki color. So........you guessed it, another hissy fit was pitched or thrown, either way you call it, I did it! Then....these guys had to return. This is a *brief* synopsis of all that's occurred. I know it's boring enough to read just this so I will not elaborate.

I am still going to physical therapy 3x a week and trying to do all the exercises at home....when a crew of dingbats have not been here. I am honestly at my wit's end with these knees and muscles too. I'm in such pain at times that I'm near tears. I do take the RX for pain although it's just a high dose of Tylenol. I don't even like to take it but have to. The therapist is a bit perplexed I think as the left patella will not stay in place. She taped both knees last Friday and it did help some. I honestly have a high tolerance for pain but this is very unusual....the muscles hurt so much that I can hardly even think and cannot do much until it stops. When I feel good, I have all these ideas about things I want to do around here, new recipes to try, you name it. I get very little done and my mood is "not me" at all. I see the orthopedic Dr again on the 6th. I really hope that he can offer some help if things have not drastically improved by then.

It's sad to even complain when my friends are going through so much with their daughter, Candace. She is improving and that's a miracle from God! She's a young adult, early 20's, that didn't feel she needed health insurance. She needs to be in a Neuro Rehab facility, however, she must have a scholarship now. They have had the interviews and completed all the paperwork, including disability, Medicaid, etc. They cleaned out their office and made room there for Candace and her needs. Someone has to be with her 24/7 as she has horrendous headaches and behavior problems. Two relatives are RN's and they are helping so much. Eric, Candace's boyfriend, has not left her side even though he was injured too. God's grace has brought them this far and your continued prayers are so very much appreciated! It's heartbreaking to see all of them going through this.

This probably sounds like a total Debbie Downer post and for that, I apologize. I do know that when we experience these valleys, there's an incredible, joyful mountain top in the future! These stepping stones will lead to the top and I can hardly wait! I hope to be able to start visiting you and commenting. I know everyone's probably doing some amazing things and I'm missing out.

I have no idea how a lot of you are already into projects, photography, etc., already! I'm doing well to just make it through each day. ;-)

I mentioned earlier in December that all the cabinets here, kitchen and both bathrooms, were painted white. Well, yes ~ 3 times a painter was here! I think they finally got it right. However, the maintenance guys here still have to come and install all new hinges. I've had a lot going on personally so haven't had the energy to have them come yet...but I need to get it done. Due to having to move EVERYTHING out of all the cabinets and all the decor too, I damaged my knees. Yuck! Found out last year when I moved that I have arthritis in both knees and I felt that was the problem. Just continued to have severe pain and also in my legs...some days I've been close to tears and barely able to walk. Saw an orthopedic Dr last week and he is wonderful! X-rays revealed that yes, there is arthritis...in fact, it's bone on bone. However, my knee caps are out of place and that's the source of all the pain. I'm now going to physical therapy 3x a week as well as doing exercises/stretching at home, icing them 4x a day and taking heavy duty Tylenol. It is better at the moment so I'm hoping this does the trick! Such a waste of time as well as unpleasantly painful. I feel silly even mentioning this as there are so many more important issues, including this one:

A dear friend's daughter was critically injured in a motorcycle accident NYE. She's a beautiful young lady and in the Neuro Critical Care Unit at a Dallas hospital with a traumatic brain injury. She's on a ventilator but one lung collapsed Monday night and antibiotics are given for the lung infection. She survived one surgery and an MRI last evening shows damage to the frontal lobes and an indication of a stroke. She has responded to Dr's commands but has not opened her eyes yet. One thing that makes this situation even more horrid is that her sister, Melanie, was murdered near UNT a couple of years ago. You may have seen it on TV and Paula Zahn covered it too and interviewed the parents. One wonders just how much a family can take... God has the Master Plan and we don't so therefore, it is difficult to understand these things, at least for me.

If you would be so kind to pray for Candace and her parents, it would be so appreciated!

I have tried to advise everyone of the new email addy and I changed it on my blog, etc. My sincere apologies to any of you that have received SPAM. It's disgusting and a definite waste of time. After I get all my contacts moved over, I'm going to delete each one on the old addy. Hopefully, that will resolve the issue.

Yesterday was my son-in-law's birthday. My daughter had a gathering for him last night and this is the cake I made. I tried Ina Garten's Chocolate Cake ~ to die for! Honestly, I love her and this cake. It has butter, buttermilk, sour cream and coffee in it ~ so, besides the chocolate, it has to be good, right?

Chocolate Cake
adapted from Ina Garten

Ingredients
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
2/3 cup granulated sugar
2/3 cup light brown sugar, packed
2 extra-large eggs, at room temperature
2 teaspoons pure vanilla extract
1 cup buttermilk, shaken, at room temperature
1/2 cup sour cream, at room temperature
2 tablespoons brewed coffee
1 3/4 cups all-purpose flour
1 cup good cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon kosher salt

Preheat the oven to 350 degrees F. Grease your cake pans.
In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and 2 sugars on high speed until light and fluffy, approximately 5 minutes. Lower the speed to medium, add the eggs 1 at a time, then add the vanilla and mix well. In a separate bowl, whisk together the buttermilk, sour cream, and coffee. In another bowl, sift together the flour, cocoa, baking soda, and salt. On low speed, add the buttermilk mixture and the flour mixture alternately in thirds to the mixer bowl, beginning with the buttermilk mixture and ending with the flour mixture. Mix only until blended. Fold the batter with a rubber spatula to be sure it’s completely blended. Divide your batter between your cake pans – use any extra to make some cupcakes. I used 6″ round pans. Bake for 20-25 minutes, until a toothpick inserted into the middle comes out clean. Let cool for 10-15 minutes and then remove to a cooling rack to cool completely. I sliced each cake layer into 2 layers and, while warm, brushed Kahlua over them. Yum!
I used a regular cream cheese frosting and surrounded the frosted cake with Piroutte cookies that were filled with Hazelnut. Decadent! ;-)
And of course, I took some red wine...his favorite.

I took my boy, Forrester, and my daughter's dog, Maddie, to be groomed yesterday. I wanted to take a few pics of him and, as usual, he hates the camera! I had to get little bites of chicken to entice him to pose a bit and he still managed to turn his head.

I think this is good, however, his eyes look funny ~ not sure why they look this way as they are beautiful and brown. He does NOT have cataracts!

~ It's The Little Things ~

I'm feeling more and more that I just want this holiday season to be peaceful, happy, warm, fun and enjoyed. I see so many people rushing from here to there, spending tons of money looking as though they are about to explode...and not from happiness, from stress. I want it to be more about the reason for the season and enjoying family and dear friends.

I want to enjoy a Christmas program at church, see little children's eyes light up with the sight of a tree and all the lights.

There's so much joy with little ones around! My grands are teens now. :-) Where did the time go? Love them dearly and it's different now but it's still the best to be in their presence.

I want to take time to enjoy a cup of coffee or tea or a glass of wine with friends.

I want to take the time to bake cookies and other goodies and share with others. Something homemade means the world to me and I'll bet it does to your friends and family too.

If you're having guests, schedule some time to really be with them. The dishes and laundry can wait an hour...no one will even notice.

Keep Christ in Christmas!

Make it fun and really special for the little ones! You will have such joy being with them.

I love having all the lights off in my living area, beautiful Christmas music playing, candles lit, something to drink and just sitting and enjoying the tree and the twinkle lights. I can watch the sappy Christmas movies every year, regardless of how many times I've seen them. I love to leave anonymous cards on neighbors doors, wishing them a Merry Christmas. It's so much fun to pay for the person behind you in a drive-thru. Be extra nice to those working in retail ~ not an easy job. Those are some of the little things I love!

Make it a season of love, joy, peace and happiness!

~ A Little Sneak Peek ~

Just a little sneak peek before the reveal of my white cabinets. I am very pleased with the change and am anxious to find hardware to add. It has been quite an experience! The first day, Monday, 2 painters came about 10:30 a.m. One stayed and it was almost 8:00 p.m. when he left. Mind you, everything was wrapped in plastic...could barely get to the bathroom & the refrigerator was wrapped up like a package. He still managed to get paint in areas where it should NOT have been...like all over the mirror in my bathroom. I found lots of places that were not touched or just barely painted. The apt Mgr and the owner of the painting company came over Tuesday morning and inspected all the cabinets. Then yesterday another painter came and did the touch-ups, etc. I asked him to leave paint here for me...I knew I would find more areas that the "perfectionist" in me would find lacking. I'm in the midst of a huge clean up, washing all the dishes & crystal, redoing the shelves and putting things away. I've almost climbed Mr. Everest with all the ups (and downs) on the step stool. ;-) This old body is not accustomed to that. Just shows I need to be exercising more!

Just had to throw this one in! It's my little red tree that makes me happy while I'm cleaning ~ :-)

Now, I'm thinking that I'd like to paint the kitchen a different color to enhance the white. Of course, it will NOT be these painters that do it!

~ What I Did Today ~

Can you believe this? I had to take EVERYTHING out of all the kitchen and bathroom cabinets as well as clear off the counters, remove pictures, you name it.

I just tossed the shelf lining on top of more "stuff".

I so hope the tables hold up! :-)

Just a part of the glass ware/stem ware. This is just like packing to move ~ which I did twice last year ~ except it's not going to be wrapped and boxed up.

I will not share the bathroom items ~ towels, other linens, body care, make-up, meds, you know what it's like! The end result is going to be wonderful though and all of this work, worth it! I know all of you are a jealous wreck that your home is not looking like mine. ;-)

To say I'm a bit frazzled is putting it mildly. :-) Tis the season, right? Seriously, I was not in a good place on Tuesday due to the bankruptcy announcement by AMR. I do realize that we, as humans, are not in charge...God is. He will handle it in a perfect way. Early Wed morning, my daughter's oldest dog, Coco Chanel, had a seizure and was very ill. She was 17 so we knew time was limited with her, however, it doesn't matter how long you've had a pet, it's never long enough. We took her to the emergency hospital and she crossed over the Rainbow Bridge. It's very difficult to adjust ~ I did thank her for choosing that day as Thursday was my birthday and I would not have wanted it to happen then. I had a wonderful day of calls, cards, emails, etc. and feel very blessed to have such incredible family and friends.

I went over to the apt office to pay my rent and spoke to the manager. She's new and a very nice person! I advised her that my lease renewal forms had not been received and we discussed that. I asked about having lighting outlets/ceiling fans installed in my bedroom and the living room. She said of course, they would contact an electrician right away. It's so weird that there's only 1 ceiling fan and it's in the room I use as an office/art room. I really want a pretty chandy in my bedroom so now that will be possible. The biggie?? I asked to have all the cabinets painted ~ the kitchen and both baths. They are currently an oak ~ so 80's and yucky, IMHO. The painters are due here Monday morning!! I just cannot wait to have them finished....they will all be white. What I must do is remove EVERYTHING from all the cabinets! Just like packing to move ~ which I did twice last year and it's not fun. The end result will be so worth it though! I feel like a kid at Christmas with these improvements ~ so fun. :-)

My daughter & s-i-l put my Christmas tree up last Sunday and then she decorated it. I'm still adding ornaments but the rest of the decorating will have to wait until after Monday. I just love the twinkle lights on the tree ~ they are clear and so peaceful to me. I love turning off all the other lights and just enjoying the tree.

I haven't really had time or felt like reading blogs and responding to everyone so please forgive me for not dropping by. I will be better after this house "re-org". :-) I'm grateful for everyone that takes the time to stop and leave a comment...it does make my heart happy!

I'm sure everyone has heard that AMR, the parent company of American Airlines and American Eagle, filed for Chapter 11 Bankruptcy today. I spent 30 years with American prior to early retirement in '03. How this will affect my pension is unknown and very, very unsettling. I don't know when we'll have answers. This is really a time to walk the talk and have total faith in God. At the moment, I'm not in the mood for much of anything. I would really appreciate your good thoughts, prayers, positive energy, etc.

It's getting colder here ~ north winds are very strong and blowing the leaves off the trees. I so hate to see them go. I've cleaned my kitchen, dishwasher is almost finished, bathroom is clean and all the laundry is done. Christmas music is on and....NOW...I'm going into the far recesses of my closets. If I don't surface in a couple of days, please send help!

~ Monogram Tray ~

This is just a simple tray I made for a gift. It's not rocket science at all ~ :-) I found the tray at Walmart and wanted to use a textured spray paint. It really didn't turn out as a "raised" surface as much as I would like but hey, it's ok for a first try, right?

Just a simple tray ~

I used Rust-oleum's Multicolor Textured spray in Desert Bisque. It looks like a stone effect. Be sure and wrap the entire tray in plastic so only the stencil area is spray painted. That takes longer than anything. :-)

Here she is ~ done!

This pic is not that clear, however, it's just another view. I placed the initial to the far right so pumpkins, candles, candy dish, wrapped cookies or whatever could be placed on the side that's still clear. These could be done in many ways and would make a great personalized hostess or thank you gift!

I've had a bug of some sort this week...have not felt 100% at all. I haven't baked, cooked or done much of anything. Not fun! Reading blogs and responding has taken a back seat, along with everything else. I'm going to try and catch up this weekend!

Winter temps arrived for a couple of days, however, we're supposed to be back in the high 70's on Sunday. One day it's the a/c, the next the heat is on. Crazy!

I've never, ever had such a difficult time trying to do a bedroom. I've almost lived here a year and it's still not finished. I cannot tell you how many comforters I've bought....and taken back! If you need any lessons in "taking back", I'm here to help. :-) I had a king size bedroom set prior to moving and there was no way it would fit in my very small bedrooms. Honestly, I was tired of it anyway and I gave it to a good friend's grandson. I then purchased queen size bedding and it's tall/oversized, to say the least. A regular queen size will hardly fit and the last 2 king sets I purchased were too big. Oh yes, and the chocolate brown bedding I purchased fit just fine but the brown just isn't me. I just ordered a king size quilt from Overstock so we shall see. I'm thinking and hoping and praying and wishing and dreaming that all my pillows, new & old, will dress it up and I'll use my drapes I already had. Cross everything, ok? I might finally throw a Southern hissy fit if this one doesn't work!

Have you been making a list of all you're grateful for this week? I love to keep a Gratitude Journal and this time of year it just feels more important to do so. So many are planning impeccable tablescapes, houses decorated to the hilt and meals that would be fit for a King. I think of those that have nothing, little children that are hungry and our military personnel in horrendous situations. We have sooooo much don't we?

I hope that each of you have a fabulous weekend! Thanks so much for stopping by ~ YOU are wonderful and I'm extremely grateful for each of you.

FORWARD: This is a rerun! ;-)

This is one of the best apple pies ever! It's made a little differently but that adds to the overall flavor. I'm posting the original recipe and noted my changes along the way.

1 recipe pastry for a double crust 9" pie ~ I allowed the frozen crusts to thaw as I mixed the rest.
1/2 c. unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced ~ I used 6 apples and you can see it was plenty.
I added cinnamon, nutmeg and allspice...more cinnamon than anything! Did not have Apple Pie Spice on hand.

1. Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. (I used a whisk to ensure there were no lumps & continued using it after adding the water & both sugars. Once the mixture was smooth, I stirred with a wooden spoon.) Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.

2. Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off. (As you will see, I did not do the lattice work crust.)

3. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft. I covered the pie in foil after the first 15 min as it was already browning. I also baked it an hour at 350'...apples were still not tender. I then turned the oven off and left the pie inside, covered until the oven cooled. Perhaps I used too many apples?? ;-)

First, the peeling/coring/slicing of the apples ~

All peeled and tossed with a small amount of lemon juice to help prevent early browning.

Now, the bottom crust ~

I used Marie Callender's frozen pie crusts ~ 2 in a package. Let me tell you, they are the closest to homemade that you will find....and so much easier! I really stuffed the apples in here ~ :-)

Be SURE and have your pan/cookie sheet lined with foil! Hopefully will avoid spills & running over. Now, pour the liquid ingredients over the apples....and be very careful as it is hot and tends to run every which way. I moved some of the apples around a bit with a fork in this process.

That part is done! Now we add the top crust. I cut 3 apple shapes out of the center of the 2nd pie crust to vent as well as placing the little apple shapes on top as decoration.

I used the tiny cutters I had from Williams-Sonoma.

I brushed milk over the entire top crust and sprinkled with sanding sugar...helps the browning and a prettier crust when baking is complete.

All done and your kitchen will smell like heaven!

I am so NOT a photographer so some pics came out larger than others. You can tell those that are blurry didn't publish well. :-(

I apologize in advance for the poor quality photos ~ I've searched and could not find any that were better. :-( Just wanted to let you know what to look for if you choose to try these. I just recently bought my first skin care products from the Boots #7 line at Target. I have very dry skin and it's difficult to find a product that feels like it's working....is not heavy or greasy. So far, I'm very pleased. I think it's been about 3 weeks with no adverse affects. I had read a review in one of the style magazines and the products were featured on ET one evening. Good Housekeeping has given their seal of approval ~ for whatever that may mean. :-) They do offer a line of make-up, lipsticks and gloss, eye shadows, mascara, etc. My daughter did buy one of the eye shadows and she loves it! One item I just purchased was the Lip Protect and Perfect. Oh my word, you cannot imagine how wonderful it feels! You apply prior to lipstick or gloss in the morning and then however you'd like through the day & evening. I promise, you'll love it!

Today is not just 11-11-11...it's a special day set aside to honor all veterans that have protected us since WWI and some gave their all to do so. It would be great to find a way to really honor them personally. If you are related to one or have a veteran among your friends or social circle ~ give them a call, write a personal note or email them, stop by a local VFW and just say "Thank you!" You just cannot imagine how much these words mean to them.

I feel very strongly about supporting our military personnel on active duty also. They are in horrible situations and in harm's way every hour to protect us. One way to honor our military is, once again, just to say "Thank you!" You can easily do that by offering a prayer for them.

A friend shared this recipe with me eons ago. It's great as an appetizer or you can serve with rice, make tacos or fajitas...whatever sounds good to you. Just make a LOT! :-)

1 pound uncooked medium shrimp, peeled and deveined
1 (1.6oz) pkg.buffalo wing seasoning mix (such as McCormick® Original Buffalo Wings Seasoning Mix)
5 T. unsalted butter
2 tsp. bottled minced garlic
1/4 tsp. crushed red pepper flakes
1/4 cup coarsely chopped fresh cilantro
2 tsp. lime juice

4 lime wedges, for garnish (optional)

Rinse the shrimp with cold water and pat dry with paper towls. Add the shrimp and seasoning mix to a plastic bag and shake to coat.

Heat the butter, garlic, and red pepper flakes in a large skillet over medium heat until the butter has melted. Raise the heat to medium-high; when the butter begins to pop and sizzle add the shrimp to the pan. Cook and stir the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center, about 3 to 4 minutes. Do not overcook.

Remove the pan from the heat and stir in the cilantro and lime juice. Garnish with lime wedges and serve hot.

This is a good description of me this past week!

I wanted to thank you for stopping by or emailing....for all your good thoughts and prayers. I had an appointment or something else scheduled each day and really have not been on the computer except for a couple minutes. I had 1,971 emails this morning! Took awhile to delete those that were not important and I still have not responded to those I want to. Please bear with me, ok? :-)

I met with the cardiologist on Thursday for the results of the tests I had the previous Friday. I am extremely grateful ~ he said the heart is strong and there are no blockages. There is, however, an underlying "something" that is causing the EKG's to be abnormal. One thing he said that is a possibility is if I have old fillings and/or crowns...they could be leaking and that goes into your blood stream. So now, I go to the dentist to see about that. Also, have to work on my cholesterol & triglycerides.

My mammogram appt was early Wed morning. Long story short, the girls at the reception desk were severely lacking in customer service skills and I waited forever. Once they finally took me to the back to change clothes, etc., that room was also packed. I asked about the wait there and it was going to be close to another hour. Nope, not for me! The girl said I was 'welcome' to return later as they started again at 1:00 p.m. The technicians were all at lunch between 12-1p so she said I should be back at 12:30. I asked her why I should be back then when they were all at lunch...she responded that I could be seen at 1:00 that way. I told her no, I could understand returning 5-10 min prior but the additional 30 min wait was unacceptable. I left and joined friends for breakfast. I tried calling the facility manager in the afternoon but they said she was in a conference. I waited until 5:15 and no call back so got online and contacted the corporate office. Within 10 min of sending my email, a lady called from that office. I explained the rude behavior, the waiting, etc. She apologized and got the manager on the phone also...the one I had been waiting on to return my call. One comment made was this was their busiest time of the year. I told her that was not my problem...it was theirs for the way they were scheduling ladies and that I had made my appt over a month ago. We had a lengthy chat and I am to return early Mon so we shall see if things are improved!

My daughter put up 3 Christmas trees Monday evening and did a lot of decorating. :-) I took one of her dogs and mine to be groomed on Tuesday and it was fun to see what she had done. She and a couple of her friends did more decorating today ~ that girl LOVES Christmas!

We had our first frost yesterday morning. I turned on the heat the night before just to make sure it was ok....nope, cool air and would not shut off. Finally got it turned off and called the office yesterday morning. Then it was like a swinging door here while they did the inspection and then repaired it.

I honestly don't know where the week went. I'm looking forward to catching up with all of you and see what exciting things you've been doing ~ cooking, painting, sewing, decorating, etc. IF you got this far, I appreciate your reading! I'm always excited to have you stop by and leave a comment. It's like I've been missing good friends all week. Hope everyone is warm and cozy and enjoying the weekend!

This is a soup that I just "made up" so feel free to add ingredients of your choice! It's great for fall evenings and is full of protein. My grandkids love it and I made this batch for them on the spur of the moment. Their parents were extremely busy so I figured a meal would be nice for all!

I don't often use canned products due to the sodium, however, in this dish it hardly matters. These are the ingredients I had on hand. I rarely am ever without fresh garlic but guess what? It happened here! :-)

I saute the onion and garlic in about a tablespoon of olive oil and then just add all the beans, broth, tomatoes. I drain and rinse the black beans...the others I add juice and all. I always add other seasonings too ~ that's up to you.

I remembered that I had 1 zucchini left so I grated it in the mini-processor and added it. I was out of the tiny pasta the kids like so I added frozen corn ~ something else they love. You can tell I needed to go grocery shopping! In the past I've added grated carrots, chopped spinach, kale, whatever. It's strictly up to you!

I did keep one dish for me ~ ;-)

I've been reluctant to show photos of my space as I live in an apt...not a huge, spacious home. I'm retired and don't need as many "things", nor do I have the extra cash to spend frivolously but here we go! Picture overload so be warned ~

So maybe this provides a little synopsis of "me". You can tell I love color, funky and fun. I don't follow design trends or colors or any "shoulds" about decorating. I'm not a formal person now at all ~ just want my space to be happy and comfortable.

Oh yes, the buffet needs to be painted also! It's an antique piece, sort of a walnut color. Any suggestions for it and the armoire are most appreciated.

I am "almost" a furniture painting virgin. Yes, I know....that is really strange isn't it? :-) I have done a few small items like tables but nothing big, nothing like this!

I've wanted to paint this armoire for a very long time. My first inclination was to paint it black but I'm not so sure now. From everything I've read, most of you love the ASCP but in my opinion, it is difficult to choose a color. I see a "grey" mentioned, however, then the person says it's more taupe. A blue or greenish shade seems to look like the opposite color. I really need help!!! Now, I know a ton of you love white ~ I'm not there. I can't say that I would be happy with a definite blue or green....perhaps a grey? But it's gotta have some sort of highlights or glaze I think. See, I'm all over the place and I know it! Perhaps I should just go and look at regular paint samples and see if anything appeals to me. I just thought it would be easier NOT to have to do a primer, sand, etc.

I have a cherry red love seat and a huge black and white ticking chair with ottoman. The accents; pillows, tables, decorative items, etc., are black, red, animal prints, a bit of silver and gold, etc. There are a few touches of yellow in art work as well as sage green.

It's been a beautiful day here in Texas! In the 50's this morning when Forrester and I went walking about 6 a.m. ~ I woke up at 4a.m. This afternoon it reached 85' but I can deal with that!

I had my annual physical about 3 weeks ago...a couple of tests came back abnormal. I saw one Dr. this morning and she felt all was ok in the realm of her speciality. I do have to see a cardiologist first thing Monday morning so if you don't mind sending good thoughts, light candles, say a prayer...whatever you choose, I would be most appreciative!

I started my allergy shots this week and so far, so good. I gave myself both shots today and the Dr was pleased. Now I can give myself the shots without having to go in to the office.

I've spent quite a bit of time going through boxes in my storage closet that were just put there last Nov when I moved. It's helped a lot to sort through things. I got out all the fall and Halloween decor and put things out. It was all driving me bonkers! I don't know why ~ that hasn't happened in the past. I've taken it all down and boxed it up and it will go back in storage in the morning. I do still have a fall wreath on the door. I'm not crazy, really! :-) I think it was all making me feel claustrophobic.

I think a pedicure is in order tomorrow! I went to World Market between Dr appts today ~ love that store. I rarely do this but I bought a mini bottle of champagne and I'm getting ready to jump in bed with it, a good book and my dog. I think it's about 2 glasses. :-) I hope you have a wonderful evening and a fun weekend!

~ Shrimp Butter on Crostini ~

This is a very old recipe shared by a girl I used to work with. I've changed a few things and adapted it to suit my taste. Feel free to do the same!

1 (16-ounce) French bread loaf, cut into 20, 30 or 40 slices (depends on number of servings you want)

2 (8-ounce) packages cream cheese, softened
1/2 pound butter, softened

1 c. shredded Mozzarella cheese

1 pound peeled cooked shrimp, finely chopped
1 small onion, grated
2 T. fresh lemon juice
1 T. Hellmann's mayonnaise
1/4 tsp. garlic salt or minced fresh garlic
1/4 tsp. pepper

1/2 c. chopped fresh tomatoes or roasted red peppers (optional)

1/8 tsp. cayenne pepper (optional)

Garnishes: peeled cooked shrimp, chopped chives or spinach

Place bread slices on baking sheet; bake at 350° for 5 minutes or until lightly toasted.

Beat cream cheese and butter at medium speed with an electric mixer until fluffy. Stir in Mozzarella, shrimp and next 5 ingredients; spread mixture evenly on toasted bread slices. Return to oven for 5-10 min...just long enough for cheese to melt. Garnish, if desired.

~ Blue Cheese-Ricotta Dip ~

This is a fun, easy and tasty appetizer to serve this time of year. Add the wine and you're set! ;-)

1 15-ounce container ricotta cheese
8 ounces blue cheese, crumbled (2 cups)
2 T. apple cider (can use milk)
Freshly ground black pepper
Snipped fresh chives or your favorite herb

Green and/or red apple slices
Breadsticks, crackers, pita chips ~ your choice!

Allow ricotta and blue cheese to stand at room temperature for 1 hour. In a medium bowl stir together the cheeses, mashing with a fork until well combined. Stir in the apple cider. Add pepper to taste. Spoon into a serving bowl. Sprinkle with chives or garnish as desired. You can form the mixture into the desired shape that you prefer. It's fun to try for a pumpkin this time of year! I use a cake pan that I bought when I was working at Williams-Sonoma for awhile. You can also clean out a small pumpkin or gourd and use it as the serving dish...lots of choices!
I've shared this in the past but figured it was ok as a Fall rerun. I have so much going on right now but wanted to join the parties!

~ Quinoa and Black Beans ~

Another use for Quinoa! I love it and this is really pretty healthy. It can be used as a salad or a side dish, served warm or cold.

1 tsp vegetable or olive oil

1 onion, chopped (purple onion adds color)

3 cloves garlic, peeled and chopped

3/4 cup uncooked quinoa

1 1/2 cups vegetable broth (can use chicken broth)

1 tsp ground cumin

1/4 tsp cayenne pepper

salt and pepper to taste

1 cup frozen corn kernels

2 (15 ounce) cans black beans, rinsed and drained

1/2 cup chopped fresh cilantro

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes.
Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

You can add other ingredients such as green chilies, bell pepper, chopped chicken and garnish if you choose with avocado and sour cream.

How do you manage to do all sorts of crafts, painting, cooking, baking, decorating, shopping and blogging? Especially those with kids ~ wow, I can't even imagine! I seem to be having a time management problem big time! It's embarrassing to admit this 'cause it's just me here. I don't have to cook for someone else although I do share a lot with my kids. Perhaps it's the change in seasons? I want & need to clean out closets and toss/donate. I have some fall decorating I want to do, crafts...even sewing...and I love to bake this time of year. I want to browse blogs and see what each of you are up to and respond. I could spend hours on the computer but that's not "a good thing" is it? Well, it isn't if I want to accomplish other things.

It just blows my mind that others can post daily or often along with accomplishing a jillion other things. I realize I have to create my own schedule but at the moment, I'm stumped. This week I've had Dr. appts, scheduling future appts, a bit of a reaction to the flu shot that I had and a few other things. Nothing huge but I feel like I'm treading water and not getting anywhere. I'd love for you to come over for coffee or a glass of wine and talk to me about this. :-)

~ Low Fat Chicken Tamale Casserole ~

This is another 'old' recipe from Cooking Light. It's easy and great for kids too. I'm sharing the original recipe with changes I've made in red.

1 c. (4 ounces) preshredded 4-cheese Mexican blend cheese, divided (I like to use Pepper Jack too.)

1/3 c. fat-free milk (I normally use 2% all the time.)

1/4 c. egg substitute (Can use 1 whole egg)

1 tsp. ground cumin

1/8 tsp. ground red pepper

1 (14 3/4-ounce) can cream-style corn (I use whole corn...I think the cream style is too sweet.)

1 (8.5-ounce) box corn muffin mix (such as Martha White)

1 (4-ounce) can chopped green chiles, drained (I use 2 cans or a bunch of fresh Hatch chilies.)

Cooking spray

1 (10-ounce) can red enchilada sauce (such as Old El Paso)

2 cups shredded cooked chicken breast

1/2 cup fat-free sour cream (I use low fat along with other garnishes)

Preheat oven to 400'.
Combine 1/4 cup cheese and next 7 ingredients (through chiles) in a large bowl, stirring just until moist. Pour mixture into a 13 x 9–inch baking dish coated with cooking spray.
Bake at 400° for 15 minutes or until set. I bake this a bit longer to ensure it's done. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with chicken; sprinkle with remaining 3/4 cup cheese. Bake at 400° for 15 minutes or until cheese melts. Remove from oven; let stand 5 minutes. Cut into 8 pieces; top each serving with your choice of sour cream, avocado slices, chopped tomatoes, cilantro, limes, etc.

And it's a beautiful day in the neighborhood! :-) It will be warmer today but still not that triple digit stuff we've had for months and it's cooler at night. Yay!

Have you ever made an Ice Cream Cake? My gson's birthday is on Monday and that is his request. I've ordered them but never made one.

It's been a crazy week here. A long-term family friend passed away and the services were yesterday. The family is doing well and that is a huge blessing! She had been ill and had dementia so it truly is a blessing for her to be in a better place now.

I hope each of you are happy and doing well! Let's all pray that there are no terrororist attacks this weekend. Hopefully, the memorial services tomorrow will go as planned with no problems.

~ I hope that everyone is having a safe, fun & happy Labor Day! It was in the high 60's this morning and forecast for this afternoon is low 80's. I wish you could see how happy and excited I am!! I'm jumping up and down ~ yeah, right. :-) Seriously, this is like a piece of Heaven after 68 days of triple digits. We almost tied or broke the record of 1980 for 69 days of triple digits. Knowing Texas, I'm sure the heat will rise again but at least we've had this wonderful break!

~ Have you ever lost a sewing machine? Or a large, framed print....poster size? I have torn this place apart looking for both! In case some of you are wondering if I've completely lost my mind, I moved twice last year...last time in late Nov. It was unexpected and very fast. Anyway, I had some special items stored in one closet and I honestly thought the sewing machine was in there. I had it boxed up nicely. The print? I thought it was in the back of that closet too. I had placed 2 large mirrors there but have moved them since. Anyway, I cannot imagine what happened. They are not in my storage closet either. My family and I have used the movers several times and they are very reputable....I know everything was out of the former place...just cannot figure this out. I'm in the mood to sew with no machine and no answers.
~ What type of smart phone do you have? I'm thinking of changing and I'm really not sure which one to choose. Any suggestions are most appreciated!

~ Please pray for everyone in Texas that has been or might be affected by the raging fires. So many homes have been lost and the firefighters are exhausted. One of cousins lives in Austin and had to evacuate their home yesterday. So many in harm's way ~

~ Mexican Botano Platter ~

This is a very old "Texas" recipe from along the Texas-Mexico border. Botano means snack or appetizer. It is like a fajita appetizer and serves at least 12. It is a great accompaniment to a mexican style dinner, adding spanish rice, warm flour tortillas, etc. Use as a snack for watching football or just having guests for drinks and appetizers. A great margarita or icy cold beer is the perfect drink to add!

2 pounds beef skirt steak
2 pounds boneless chicken breasts and thighs
Use can also use shrimp if you choose ~ just don't overcook.
2 teaspoons fajita seasoning
2 1/2 teaspoons garlic powder
salt to taste
lemon pepper to taste
~ Use any of your favorite seasonings.

1 medium green bell

1 medium onion, chopped

1/3 bunch cilantro, chopped

2 c. refried beans (Using black beans is really good!)

1 (16 ounce) package shredded mexican cheese

Sour cream, chopped tomatoes and sliced jalapeno peppers to garnish

Your favorite guacamole!

The original recipe called for frying quartered tortillas in hot oil, however, you can use your favorite tortilla chips and save lots of fat and time.

Preheat oven to 350 degrees

Rub beef and chicken with fajita seasoning and 2 teaspoons garlic powder. Cut beef and chicken into 1-inch strips, and set aside. (You can season meat and marinate overnight.)

In a saucepan, warm refried beans over medium-low heat

Lightly spray a skillet with olive oil or vegetable oil and heat to medium heat; stir in beef, chicken, bell pepper, and onion. Cook, stirring occasionally, about 7 minutes; then stir in cilantro. Sprinkle fresh lime juice over all.

Layer the tortilla pieces along the bottom of a large baking dish. Spread refried beans evenly over tortilla pieces. Spread meat mixture evenly on top of beans and sprinkle cheese over all.

Bake in preheated oven until cheese and beans are bubbly, about 20 minutes. Remove from oven, and drop sour cream and guacamole by tablespoonfuls in various places across the top. Sprinkle tomatoes and jalapenos on top.

This makes a LOT. I recommend serving all condiments on the side and allow guests to garnish as they choose. Ole!

~ This 'N That ~

Do you have days that are just flat frustrating? I'm in the midst of that kind o' day so if you don't want to read further, I understand.

~ Trying to connect to a "real live person" at companies these days is almost impossible! I want to throw the phone when you are reminded to go online at xyz.com and blah, blah, blah. Going online does not always provide the answer you're seeking. I am trying to find out information in regard to my cell phone contract...simple, right? I've found it online in the past...not now. It takes hours it seems to stop in at one of the AT&T stores....cannot get a real person on the phone...what are we to do?

~ Next on my agenda is to try and find a reasonable place to get a haircut for less than $50 and does not require me to drive 30 miles. I'm retired...I have to watch those pennies.

~ I did go for a mani/pedi today. The girl that I like is absolutely fantastic and I just go into another zone while she's working on me and the chair is massaging my back and I have ice water to drink. Today, a woman came in for a pedicure and they placed her in the chair next to me....why, I don't know. There are 10 positions, all empty at the time except for mine. This lady wrestles her bag, paper work, envelopes, phone, you name it for about 15 min, all the while talking about it. She asks the technician if she has about an hour....the girl says yes so she proceeds to connect to a conference call! I gave her a look that could have killed someone in Iraq! I do not go anywhere to be a part of some one's conversation or conference call. Thank Jesus, (this is not sarcastic...I thank Him all day long) I was almost ready to go to the drying table. It blows my mind that people think everyone else should be subjected to their calls.

~ I just read Alison's post at The Polohouse and she mentioned Blogger, trying to respond to all the blogs, post, comment, etc. I so understand! I think that we just have to do the best we can, when we can. There's no way that I could paint, cook, bake, build, design, photograph everything and post daily. I honestly do not know how folks do it...especially those with kids.

~ I would like to know why some bloggers still have word verification turned on? You can still approve each comment prior to it posting if you like. It is such a deterrent to having comments, at least I think so. It takes so long and if the first word doesn't work, then here we go with another. Bottom line, it is not necessary and is very frustrating. OK, now I will say Yes, it is your blog, not mine! :-)

~ Another thing is not having an email addy to respond to when someone is nice enough to comment. I strive to respond to each person that is kind enough to take the time to come here and leave a comment but sometimes it's just not possible. The little photos that are under the "Followers" section often do not lead to the person's blog and that's the end of that.

~ I see that Blogger has a new "interface". I am trying it for the first time ~ will see if it all blows up or my monitor melts.

~ So many folks are already decorating for Fall and I love it! It's still hotter than Hades here so it's a real effort to think 'cool' when it's 104'. Aren't you exhausted with me mentioning it? I definitely am! I do apologize too ~ I'm not in a constant state of PMS...don't have that anymore but perhaps it's hormones??? :-)

IF you have read all of this, you are truly amazing and I thank you! I thank you BIG!

~ You Reap What You Sow ~

"Good morning," said a woman as she walked up to the man sitting on ground.

The man slowly looked up.

This was a woman clearly accustomed to the finer things of life. Her coat was new. She looked like she had never missed a meal in her life.

His first thought was that she wanted to make fun of him, like so many others had done before. "Leave me alone," he growled....

To his amazement, the woman continued standing.

She was smiling -- her even white teeth displayed in dazzling rows.

"Are you hungry?" she asked.
"No," he answered sarcastically. "I've just come from dining with the President. Now go away."

The woman's smile became even broader. Suddenly the man felt a gentle hand under his arm.

"What are you doing, lady?" the man asked angrily. "I said to leave me alone.

Just then a policeman came up. "Is there a problem, ma'am?" he asked.

"No problem here, officer," the woman answered. "I'm just trying to get this man to his feet. Will you help me?"

The officer scratched his head. "That's old Jack. He's been a fixture around here for a couple of years. What do you want with him?"

"See that cafeteria over there?" she asked. "I'm going to get him something to eat and get him out of the cold for awhile."

"Are you crazy, lady?" the homeless man resisted. "I don't want to go in there!" Then he felt strong hands grab his other arm and lift him up. "Let me go, officer. I didn't do anything."

"This is a good deal for you, Jack" the officer answered. "Don't blow it."

Finally, and with some difficulty, the woman and the police officer got Jack into the cafeteria and sat him at a table in a remote corner. It was the middle of the morning, so most of the breakfast crowd had already left and the lunch bunch had not yet arrived.

The manager strode across the cafeteria and stood by his table. "What's going on here, officer?" he asked. "What is all this, is this man in trouble?"

"This lady brought this man in here to be fed," the policeman answered.

"Not in here!" the manager replied angrily. "Having a person like that here is bad for business."

Old Jack smiled a toothless grin. "See, lady. I told you so. Now if you'll let me go. I didn't want to come here in the first place."

The woman turned to the cafeteria manager and smiled. "Sir, are you familiar with Eddy and Associates, the banking firm down the street?"

"Of course I am," the manager answered impatiently. "They hold their weekly meetings in one of my banquet rooms."

"And do you make a godly amount of money providing food at these weekly meetings?"

"What business is that of yours?"

"I, sir, am Penelope Eddy, President and CEO of the company."

"Oh."

The woman smiled again. "I thought that might make a difference." She glanced at the cop who was busy stifling a giggle. "Would you like to join us in a cup of coffee and a meal, officer?"

"No thanks, ma'am," the officer replied. "I'm on duty."
"Then, perhaps, a cup of coffee to go?"

"Yes, ma'am. That would be very nice."

The cafeteria manager turned on his heel, "I'll get your coffee for you right away, officer."

The officer watched him walk away. "You certainly put him in his place," he said.

"That was not my intent. Believe it or not, I have a reason for all this."

She sat down at the table across from her amazed dinner guest. She stared at him intently. "Jack, do you remember me?"

Old Jack searched her face with his old, rheumy eyes. "I think so -- I mean you do look familiar."

"I'm a little older perhaps," she said. "Maybe I've even filled out more than in my younger days when you worked here, and I came through that very door, cold and hungry."

"Ma'am?" the officer said questioningly. He couldn't believe that such a magnificently turned out woman could ever have been hungry.

"I was just out of college," the woman began. "I had come to the city looking for a job, but I couldn't find anything. Finally I was down to my last few cents and had been kicked out of my apartment. I walked the streets for days. It was February and I was cold and nearly starving. I saw this place and walked in on the off chance that I could get something to eat."

Jack lit up with a smile. "Now I remember," he said. "I was behind the serving counter. You came up and asked me if you could work for something to eat. I said that it was against company policy."

"I know," the woman continued. "Then you made me the biggest roast beef sandwich that I had ever seen, gave me a cup of coffee, and told me to go over to a corner table and enjoy it. I was afraid that you would get into trouble. Then, when I looked over and saw you put the price of my food in the cash register, I knew then that everything would be all right."

"So you started your own business?" Old Jack said.

"I got a job that very afternoon. I worked my way up. Eventually I started my own business that, with the help of God, prospered."

She opened her purse and pulled out a business card. "When you are finished here, I want you to pay a visit to a Mr. Lyons...He's the personnel director of my company. I'll go talk to him now and I'm certain he'll find something for you to do around the office." She smiled. "I think he might even find the funds to give you a little advance so that you can buy some clothes and get a place to live until you get on your feet. If you ever need anything, my door is always opened to you."

There were tears in the old man's eyes. "How can I ever thank you?" he said.

"Don't thank me," the woman answered. "To God goes the glory. Thank Jesus...... He led me to you."

Outside the cafeteria, the officer and the woman paused at the entrance before going their separate ways.
"Thank you for all your help, officer," she said.

"On the contrary, Ms. Eddy," he answered. "Thank you. I saw a miracle today, something that I will never forget. And... And thank you for the coffee."

~ Green Chile-Chicken Casserole ~

There's no way to express to you how much I'm looking forward to fall and cooler temps! At 107' again today, I'm about done. Done, I tell you! Anyway, in light of this mood and 60+ days of triple digits, I'm thinking FALL with this recipe! :-) It's from Cooking Light, ages ago.

Also, I want you to know that one of the four Fairy Hobmother's visited me from Appliances Online and I was awarded an awesome gift of $25 to Amazon!!! Is that not fabulous? I had made at comment at Miz Helen's Country Cottage last week. It's easy, peasy and you could be a winner too!

Now, to the recipe ~

1 1/3 c. fat-free, less-sodium chicken broth
1 c. canned chopped green chilies, drained*
1 c. chopped onion
1 c. fat-free sour cream*
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
2 (10 1/2-ounce) cans condensed 98% fat-free cream of chicken soup, undiluted (such as Campbell's)*
1 garlic clove, minced
Cooking spray
24 (6-inch) corn tortillas
4-6 cups shredded cooked chicken breast
2 c. finely shredded sharp cheddar cheese (Sharp cheese is a must!)

Combine the first 9 ingredients in a large saucepan, stirring with a whisk. Bring to a boil, stirring constantly. Remove from heat.

Spread 1 cup soup mixture in a 13 x 9-inch baking dish coated with cooking spray. Arrange 6 tortillas over the soup mixture, and top with 1 cup chicken and 1/2 cup cheese. Repeat layers, ending with the cheese. Spread remaining soup mixture over cheese. Bake at 350° for 30 minutes or until bubbly.

* I use reduced fat sour cream & low fat cream of chicken soup (not fat free). I add more onion & double the amount of garlic & cumin. I also saute the garlic & onion in some cooking spray before adding to the sauce. I also add a large handful of minced cilantro to the sauce along with a teaspoon of green New Mexico Chile powder for a little heat & extra flavor. If you have access to New Mexico's famous Hatch Chile's, they make all the difference. :-) I used to work with a guy that went to NM each year and brought back a ton of Hatch Chile's. Now, a local Farmer's Market carries them and I freeze a large amount to use throughout the fall & winter.

I subscribe to the DailyOM and the topic today is "Giving The Gift of You"....

Being of service to our community is part of being a good citizen of the planet earth.To live harmoniously, we need to be supportive and helpful to all people, creatures, and plant life that share this earth with us. While “being of service” is part of being a good citizen of the world, it also feels good to help others. When we do something for others in service, without the expectation of anything in return, we are turning our actions into offerings.

There are many ways to be of service to our community. There are the obvious and much needed volunteer opportunities, such as serving Thanksgiving dinner at a shelter, mentoring our youth, or cleaning up a beach. Then, there is the kind of service that we may not even think of as being acts of service. Learning a new language (perhaps sign language) so that you can talk to more people is a way to reach out to others. Inviting someone who isn’t motivated enough to exercise on their own to join you on your daily walk is a way to give of yourself. Sharing flowers or vegetables from your garden, organizing a poetry reading, offering to babysit for a busy parent, or donating pet food to an animal shelter all are simple ways to offer your services to your community.

There are many ways that you can serve the world. Imagine the impact we would have on the environment if we picked up one piece of trash off the street everyday and chose not to drive our car once a week. Even gardening tactics such as throwing wildflower seeds onto a vacant lot can brighten the lives of others – including the lives of birds and insects. Everyday, you can do something to make this world a better place. During meditation, ask for guidance on what you can do to be of service. This can be a wonderful way to start your day. Smiling at a stranger who looks down in the dumps or teaching your neighborhood kids how to whistle will impact someone’s day or even their life. Giving of yourself is the best gift that you can give.

~ Mississippi Mud Cake ~

1 cup butter, melted

2 cups sugar

1/2 cup unsweetened cocoa

4 large eggs, lightly beaten

1 teaspoon vanilla extract

1/8 teaspoon salt

1 1/2 cups all-purpose flour

1 1/2 cups coarsely chopped pecans, toasted

1 (10.5-ounce) bag miniature marshmallows

Whisk together melted butter and next 5 ingredients in a large bowl. Stir in flour and chopped pecans. Pour batter into a greased and floured 15- x 10-inch jellyroll pan.

Bake at 350° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; top warm cake evenly with marshmallows. Return to oven, and bake 5 minutes. Drizzle Chocolate Frosting over warm cake. Cool completely.

Note: 2 (19.5-ounce) packages brownie mix, prepared according to package directions, may be substituted for first 7 ingredients. Stir in chopped pecans. Bake at 350° for 30 minutes. Proceed with marshmallows and frosting as directed.

Chocolate Frosting
1 (16 oz) package powdered sugar, sifted
1/2 c. milk
1/4 c. butter, softened
1/3 c. unsweetened cocoa

Beat all ingredients at medium speed with an electric mixer until smooth.

One day, a poor boy who was selling goods from door to door to pay his way through school, found he had only one thin dime left, and he was hungry. He decided he would ask for a meal at the next house. However, he lost his nerve when a lovely young woman opened the door.Instead of a meal, he asked for a drink of water. She thought he looked hungry and so she brought him a large glass of milk. He drank it slowly, and then asked, "How much do I owe you?"

"You don't owe me anything," she replied. "Mother has taught us never to accept pay for a kindness." He said, "Then I thank you from my heart." As Howard Kelly left that house, he not only felt stronger physically, but his faith in God and man was strengthened also. He had been ready to give up and quit.

Years later, that young woman became critically ill. The local doctors were baffled. They finally sent her to the big city, where they called in specialists to study her rare disease.

Dr. Howard Kelly* was called in for the consultation. When he heard the name of the town she came from, he went down the hall of the hospital to her room. Dressed in his doctor's gown, he went in to see her. He recognized her at once. He went back to the consultation room determined to do his best to save her life. From that day, he gave special attention to the case.

After a long struggle, the battle was won. Dr. Kelly requested from the business office to pass the final billing to him for approval. He looked at it, then wrote something on the edge, and the bill was sent to her room. She feared to open it, for she was sure it would take the rest of her life to pay for it all. Finally, she looked, and something caught her attention on the side of the bill. She read these words:

~ Bar-b-Que Pork Sliders ~

I just made these for a party and thought I'd share with you. I know you've seen them everywhere....this is my version! :-)

I found a boneless pork roast on sale for a very good price...it was 3-1/2 lbs. I used different

bar-b-que sauces this time as they were on sale. I really prefer KC Masterpiece and will go back to those next time. Everyone said this was excellent so it's just my taste preference. It's great to use a slow cooker due to the food temp as well as not heating up the kitchen with the oven.

I placed almost a bottle of sauce in the bottom of the crockpot and placed the pork roast on top of that. I made little slits all over the top of the roast and inserted whole garlic cloves. I added 1 whole onion in generous slices. Other seasonings used:

All Seasoning

Cavender's Greek Seasoning

Uncle Julio's Seasoning (local item)

Ground black pepper

I didn't add salt due to the sodium in the sauces

All of these are used generously...I recommend you use your favorites in the amount you desire.

We like things spicy around here! :-)

I then poured the balance of the 1st bottle of sauce plus another full bottle over the pork, covered it and cooked 1 hour on high. I then changed the temperature to Low and cooked an additional 5-1/2 hrs.

Next step is to remove the entire roast from the slow cooker. I cut off the string netting holding it together and then shredded with 2 forks.

Lookin' good, huh?

After this is done, return it all to the slow cooker, cover with more b-b-que sauce if needed. Just make sure it's covered so it will be nice & moist. Cook another hour on Low. All done! For those that know me, I'm sporadic with making photos while cooking/baking...just can't get the hang of it yet! :-) So.....I don't have a pic of the finished product so I'm using the pic below from another recipe. You can add cole slaw (we had it on the side) or any other condiments to your sliders. I buy the small rolls and don't heat them...the meat/sauce is hot enough...and again avoiding the oven in these brutal temps.

If you haven't tried these, I suggest you do. Easy and flavorful!

This heat is just brutal! It was 112' yesterday and is expected to be worse today. I know I sound like I'm harping on the subject but hey, we're 40 something days of triple digits here! We have severe drought conditions and this is so hard for farmers and cattlemen in the state plus we must cut back on water usage everywhere. There's such a drain on the power system that everyone is asked NOT to use any appliance, etc., between 3p-7p. I take Forrester on long walks early morning and late evening...in between, it's just a quick run out the door and back. I am sick of being inside so much but so very grateful for A/C! There have been several deaths in the area, one a high school coach on Monday. Football practice was going on and they were taking scheduled breaks. He collapsed on the field....leaving behind his wife and 5 children, one of which is a student at the same school.

My daughter's birthday was yesterday. She requested a chocolate pie and I did make one, even started with a couple of pictures. However, I forgot to take one of the finished product. If I'm over there again before it's gone, I'll make one and share.

If you so choose, send prayers for rain...do a rain dance! :-)

~ A Survey ~

I've been under the weather the past few days so really don't have anything exciting to share. I am very excited though...there are now over 200 followers here!! I know, I know....all of you that have hundreds or thousands are rolling in laughter but hey, I'm thrilled! I so appreciate anyone that chooses to stop by and follow. There are so many incredible blogs out there and I realize everyone's time is limited.

Now, for the survey part. I'd like to do another giveaway to honor this momentus occasion but my mind is not working too well. Yeah, I know...not a rare occasion is it? :-) I'd like to know what your preferences are for giveaways ~ a treasure trove of items like for a kitchen, bathroom, etc., a magazine subscription, holiday items. Other suggestions are so welcome!

~ Easy Frost Chocolate Fudge Cake ~

I made this cake for my granddaughter's 14th birthday. She, along with the rest of my family, are all chocoholics so it was a hit! It's so easy to do and fun too ~ the "Easy Frost" was simple and tasty also. You can frost cupcakes in a hurry as well as cakes, etc.

I just used the recipe on the box of cake mix, however, I normally add brewed coffee as part of the water required and the rest milk. Just offers a more "real" taste I think. I also used a fudge frosting for each of the layers...except the top. My kitchen is sooooo small....it is difficult to make pictures that are attractive. I think that most of you that know me realize I forget to make pictures too! Still haven't gotten in the swing of it ~ :-)

I used the Wilton 6" cake pans for this and sliced each cake layer into 2 pieces. Made a tall cake. Oh yes, I did slice off those tops to even the cake layers as well as get rid of the ugly parts. Those, with left over frosting, made a small piece for Mimi to taste. And yes, those are dog treats in the background! The onions on the right are for a savory dish....sorry they are there.

Before you know it, you're finished! Oh, and I forgot to place one of those pretty, lacy doilies under the cake. I was in a hurry...but I did get a few photos! :-)

~ San Antonio, Texas Duck Story ~

Something really cute happened in downtown San Antonio this week. Michael R. is an accounting clerk at Frost Bank and works there in a second story office. Several weeks ago, he watched a mother duck choose the concrete awning outside his window as the unlikely place to build a nest above the sidewalk. The mallard laid ten eggs in a nest in the corner of the planter that is perched over 10 feet in the air. She dutifully kept the eggs warm for weeks, and Monday afternoon all of her ten ducklings hatched.

Michael worried all night how the momma duck was going to get those babies safely off their perch in a busy, downtown, urban environment to take to water, which typically happens in the first 48 hours of a duck hatching.
Tuesday morning, Michael watched the mother duck encourage her babies to the edge of the perch with the intent to show them how to jump off. Office work came to a standstill as
everyone gathered to watch.

The mother flew down below and started quacking to her babies above. In disbelief Michael watched as the first fuzzy newborn trustingly toddled to the edge and astonishingly leapt into thin air, crashing onto the cement below. Michael couldn't stand to watch this risky effort nine more times! He dashed out of his office and ran down the stairs to the sidewalk where the first obedient duckling, near its mother, was resting in a stupor after the near-fatal fall. Michael stood out of sight under the awning-planter, ready to help.

As the second one took the plunge, Michael jumped forward and caught it with his bare hands before it hit the concrete. Safe and sound, he set it down it by its momma and the other stunned sibling, still recovering from that painful leap. (The momma must have sensed that Michael was trying to help her babies.)

One by one the babies continued to jump. Each time Michael hid under the awning just to reach out in the nick of time as the duckling made its free fall. At the scene the busy downtown sidewalk traffic came to a standstill. Time after time, Michael was able to catch the remaining eight and set them by their approving mother.

At this point Michael realized the duck family had only made part of its dangerous journey. They had two full blocks to walk across traffic, crosswalks, curbs and past pedestrians to get to the closest open water, the San Antonio River, site of the famed "River Walk." The on looking office secretaries and several San Antonio police officers joined in. An empty copy-paper box was brought to collect the babies.
They carefully corralled them, with the mother's approval, and loaded them in the container. Michael held the box low enough for the mom to see her brood. He then slowly navigated through the downtown streets toward the San Antonio River. The mother waddled behind and kept her babies in sight, all the way.

As they reached the river, the mother took over and passed him, jumping in the river and quacking loudly. At the water's edge, Michael tipped the box and helped shepherd the babies toward the water and to the waiting mother after their adventurous ride.

All ten darling ducklings safely made it into the water and paddled up snugly to momma. Michael said the mom swam in circles, looking back toward the beaming bank bookkeeper, and proudly quacking

At last, all present and accounted for: "We're all together again. We're here! We're here!"

Like all of us in the big times of our life, they never could have made it alone without lots of helping hands.
I think it gives the name of San Antonio's famous "River Walk" a whole new meaning!

~ Mango, Avocado & Shrimp Salad ~

This is a recipe from Southern Living, eons ago. So easy, something cool to eat and very tasty!

3 T. fresh lime juice
2 T. grapeseed or vegetable oil

1 T. sugar (I only use about 1 tsp. sugar)

2 large firm, but ripe mangoes (2 lbs. total)

2 medium firm-ripe avocados (1 lb. total)

2/3 cup each ~ thinly sliced green onion and chopped cilantro

1 T. minced fresh hot red or green chile (or 1/2 tsp. dried red chile flakes)

1 pound (70 to 110 per lb.) peeled, cooked shrimp

In a large bowl, whisk together lime juice, oil, and sugar until sugar dissolves.
Dice mangoes and avocados into 3/4-in. cubes; add to bowl. Add green onion, cilantro, chile, and shrimp. Mix gently. Serve or cover and chill for up to 1 hour.

I love the touch of "hot" to it...offering a little kick to all the sweetness. Lisa has a beautiful blog and she's very talented in the kitchen as well as designing very unique features in her home and garden.

Another blog you just must check out is Cindy's Fractured Fairytale. Of course, if you've read Miss Mustard Seed's blog today you've seen the incredible painting Cindy did of a cow. Now, being in Texas, we see cows all the time. I don't believe I've seen one this beautiful! Cindy has had an outlet to sell her paintings, however, there's been a change so she's seeking new avenues to sell her beautiful creations.
