~ Mardi Gras and King Cake ~



I made an "easy" version of the well known King Cake. I did see the recipe somewhere online so if a blogger has posted it,  please let me know so I can give credit.


It's not the King Cake known in Louisiana but it's simple to do and that's what caught my eye! 



2 pkgs Jumbo Cinnamon Rolls ~ 5 in a pkg in the dairy case

Line a bundt pan with one package of the rolls and then layer the 2nd package over the first. Set the packet of icing aside.  Bake at 350' for about 25- 30 min, depending on your oven.  Remove the pan and allow to cool for about 10 min. Remove from pan onto a cooling rack until it's somewhat cool.

You can make the icing while the rolls are baking.  I  used 4 oz. cream cheese & about a cup or so of powdered sugar.  Beat the cream cheese until smooth and then add the powdered sugar and the packet of icing from the cinnamon roll package. Drizzle over the cake and decorate with the royal purple, green and gold of Mardi Gras.  Easy, peasy!   I made one for the grands and another for the office management team as well as the maintenance guys here.  Good to have with a cup of coffee or cup of tea.
