Such an easy cake ~ and so moist and good! I made this one for a young lady that works with my daughter. She is quite the character and so much fun. Since her real Mom lives in Virginia, I told her I would adopt her and be her Texas mom! She and my daughter both love, love lemon anything, especially this cake.
It's great anytime, especially with a cup of great coffee or tea.
Hmmm, all that lemony goodness! And below is the "baby" cake I made for my daughter. The batter is really too much for most of my Bundt pans so there's always a small cake as a left over or extra gift.
Just practicing for Valentine's Day here with a heart shaped cake pan!
This is the same recipe I posted earlier here ~
Preheat oven to 350'
1 box Lemon Flavored Cake Mix
3 eggs
1 stick butter, melted
1 c. water ~ I used 3/4 c. water and 1/4 c. lemon juice
Put all ingredients in the mixing bowl and mix well. Right before you're ready to stop mixing, add
1 can Lemon Frosting Mix (the tubs)
Just kinda fold it in or mix carefully and you're done with this part!
Pour batter into a greased & floured (Baker's Joy works well) Bundt pan. Fill about 3/4 full ~ it
will overflow if you add more. Don't ask how I know that! :) This is why I always use a small dish or pan for the remaining batter.
Bake about 40-50 min ~ depends on your oven and the size of your pan. Check with a cake tester prior to removing from the oven. Cool in the pans about 10 min and then turn out onto a cooling rack and leave until thoroughly cooled. Place on your serving dish and drizzle a glaze over it.
For this cake, I used powdered sugar, a bit of vanilla extract and 1/2 & 1/2. Mix until smooth and drizzle over the cake. Of course, you could use lemon extract or lemon juice instead of vanilla.
I promise you'll love it! I've tried many different flavors...and for my family the winners are the German Chocolate, this Lemon and the Confetti mixes that are offered around the various holidays. The grands get a kick out of those!
I've mentioned this before but thought I'd address it again. My kitchen is tiny ~ a real, one butt affair! :) I just don't have the space to show a lot of ingredients or the various steps of a recipe. Many bloggers do and it's a pleasure to see I know.

P.S. I've received so many kind notes re: my eye problems. I was supposed to go back today for a check-up, however, I woke up to a water leak in my laundry room and had to reschedule. Do you think someone's put a pox on me? ;-) My eye is better and I'm so grateful! I go in Monday.
